TUNA TARTAR

When my husband and I go to our local asian market, 99 Ranch, Ben turns into a kid in a candy store.  ”Plleeeeeeeaaaase!  Paalleeeeeeeaaase can you make me some tuna tartar?”  This is his favorite recipe.  Last weekend was no different.  We were at 99 ranch and picked up this sushi grade ahi ($5).
I got the basic recipe from Emril, but I changed it a little.
I omitted the caviar, wasabi, and avocado (because my avocados still aren’t ripe yet…but 50 cents each at 99 ranch!)
1.  Mix 1/4 cup of olive oil, 1 Tbs Dijon mustard, 2 Tbs parsley, juice from one lemon, 1Tbs of minced shallot, salt and pepper.
2.  Pour over the cubed tuna which I also seasoned with salt and pepper.
3.  Serve with fried wontons (video to follow).
