OVEN DRIED SAN MARZANO TOMATOES

I’ve been wanting to try a recipe from my A16 book that requires oven dried San Marzano tomatoes, but I’ve never been able to find fresh San Marzano tomatoes.  I’ve been using the wonderful canned San Marzano tomatoes.  However, this spring, when my parents were getting ready to plant their garden, I kindly asked that they plant some San Marzano tomatoes and they did!  Now, finally, in August (a little late for a typical tomato season here in California), the tomatoes are ready for harvest!
I harvested the tomatoes, sliced them and oven dried them on a bed of salt for 6 hours.
