POLENTA CON UOVA E PESTO

It’s a lazy Saturday morning …the best kind.  I slept in, did some reading and then got up and made this delicious breakfast.  Polenta with poached egg and pesto.  Recipe courtesy of RouxBe.com.
First, make the polenta according to the package instructions:
Sliced pancetta.
Let crisp in the oven:
Poached egg:
Assembled with homemade pesto (used basil from our herb garden and fresh cherry tomatoes from my parents’ garden).
Mmmmm….delicious Saturday morning meal!  Now off for some Burgundy tasting in the city!
