What a beautiful day! Well, it was 110 degrees during the day, but that meant that by the time I got out of work at 5pm, the weather was perfect at about 85 degrees. So, after some pool time, I decided to make this simple pasta with leftover ingredients in the fridge. What is it about spicy food on a hot day? So good!
Ingredients:
Cook Time: 15 minutes
Boil the pasta water adding plenty of salt and cook the pasta while making the sauce. Cook the pasta for one minute less than specified on the package. (for my pasta it’s 7 minutes)
Heat a nonstick pan and add plenty of olive oil to coat the bottom of the pan.
Add minced garlic and chili flakes and cook for one minute.
Add the asparagus and season with salt and pepper. Cook for about 5 minutes.
Add breadcrumbs and cook until crispy.
Add halved cherry tomatoes.
Once the pasta has cooked for one minute less than the instructions on the package, transfer to the nonstick pan to incorporate with the sauce. Add about 1/2 cup of pasta water to help finish cooking the pasta.
Add the prosciutto. Mix all the ingredients.
