When I stayed in Costa Rica a few years back, our Tican tour guides cooked this dish for us after a fun day of white water rafting. It’s like Costa Rican comfort food. It tastes good, it fills you up, it’s healthy, and it makes you feel all warm inside.
So, when my husband was on his way back from a climbing trip last night, I cooked this for him and our neighbor who went with him. I cooked a huge batch because I’ll take it to lunch during the week. It warms up great.
This is my first time attempting a video, so I apologize that it’s not the best quality. I was trying to cook with one hand and hold the video camera in the other hand. I wasn’t able to do all that and talk at the same time, so you’ll have to read the captions for the instructions. Yay! Cooking video!
