I saw some Amaretti cookies at my local Italian market the other day and was inspired to try this Giada recipe. It would have been much simpler if I had a food processor. All the ingredients are mixed in a food processor, dumped into the spring form cake pan and baked.
In my case, I mashed the amaretti cookies with a wooden spoon. Then I used my immersion blender to grind the almonds, whisked all the ingredients together and baked the cake. Still not very hard to make this delicious cake. Recipe courtesy of Giada.

It was very tasty with the homemade mint chocolate chip ice cream, which we have now polished off. What kind of ice cream shall we make next????
